Rabbit Hole Bar & Dining is one of Sydney’s premier bar and dining experiences in the CBD. Tucked away at basement level beneath the hustle and bustle of Elizabeth Street, Rabbit Hole is situated on the former site of Bar Europa, one of Sydney’s first ever underground cocktail bars. Featuring reclaimed wooden bar fronts, bookcase-like back bar, vintage chandelier and matching furniture, it really is the perfect oasis from the busy city. The venue specialises in “all things liquid” – be it molecular cocktails, local & international wines or boutique beers.
The modern French fine dining menu, and Michelin styled food, is created by Executive Chef Jeremy Metivier and is the perfect combination of current and emerging culinary trends. Jeremy has worked in numerous Michelin star restaurants which include Jean Bardet, La Feuillantine and Campagne et gourmandise in France, and Teach de Brock in Ireland. Jeremy’s most recent experience was as Head Chef at Cara & Co. in Westfield’s Sydney CBD.
Owned and run by Doug Laming, an avid and passionate molecular mixologist turned bar owner, the Rabbit Hole cocktail list has been compiled using ground breaking, pioneering techniques and flavour combinations that Australia is yet to experience. “Molecular mixology” means the process of creating cocktails using a physical and chemical modification of ingredients. Cocktail guru Doug’s experimentation has translated into the use of foams, house-made syrups, house-made spices and jellies in unique cocktails available exclusively at the Rabbit Hole, and gaining the notable achievement of CNN “12 of the world’s most unusual cocktails”. The bar also has an extensive beer and wine list consisting of both local and international varieties, with 26 wines by the glass, and a large selection of boutique beers.
The culinary skill of Executive Chef Jeremy Mitivier is equally as impressive, with his Modern French lunch and dinner menus reflecting his time spent at Michelin star restaurants. With his love of creating ̈masterpiece ̈ dishes from the highest quality produce, Jeremy has crafted a new varied menu available from the beginning of December, which still maintains the same style and superiority of dishes that customers have come to love and expect at Rabbit Hole Bar & Dining.
