There is a new destination in Manly that could be described as the ultimate space for wining, dining and socialising, with an exquisite cocktail menu, boutique beer, warm and inviting surrounds topped off with a delightful selection of Asian inspired tapas and dumplings. So it was fitting that this intimate bar was called Donny’s Bar, ‘donny’ being an ancient Asian word that translates to: “the perfect environment for a social gathering”.
Sydney Social 101 was invited to the official launch party! Co-owners Matt Clifton and Tol Broinowski hosted the launch of Donny’s Bar- the hottest new Small Bar located over the Bridge!
A mix of Sydney Socials and Northern Beaches Locals sipped signature Donny’s Bar cocktails, snacking on Asian style tapas including Wagyu Sliders and Pork Buns.
The crowd was kept entertained with live music by OXBLVD well into the night.
Donny’s Bar is the realisation of a dream for business partners Matt Clifton and Tol Broinowski. Together they envisioned an exciting new addition to Manly’s bar and dining offering, with a unique venue for locals to relax and unwind. Manly is home to a burgeoning small bar scene, which is something both Matt and Tol want to be a part of and support. Along with their team of talented chefs, ‘mixologists’ and wait staff, most of whom are Manly locals themselves, Matt and Tol hope to offer something fresh and original to the local Manly community, bringing a little bit of New York to the famous beachside suburb.
Donny’s Bar offers a selection of dumplings and tapas, perfect for sharing, whilst also offering a more formal dining experience in the upstairs space. The bar menu features a tempting selection of dumplings including BBQ pork buns, prawn Gar-gee and organic vegetable dumplings, as well as Modern Australian tapas with a slight Asian influence. The main menu includes a selection of gourmet burgers and classic Australian favourites with a Donny’s twist. Head Chef Richi Dia, originally from Japan, has decades of experience creating both Asian and European cuisine, and has spent much of his career in fine dining venues. The result is a refreshingly modern menu, featuring an inspired combination of flavours, finished off with Richi’s unmatched eye for detail and presentation. This is bar food on a whole new level.
The Donny’s Bar drinks menu shows just as much thought and attention to detail, offering a divine collection of in-house speciality cocktails, local beers and handpicked selection of wines from Australia, New Zealand and France. Some of the Donny’s Bar cocktails include the floral ‘Blueberry n Rose Bramble’ with Plymouth gin, house made rose syrup and a blueberry float, as well as some further Asian inspired references including the ‘Bonsai’ with muddled cucumber, Plymouth gin, applies lime and mint and the fruity ‘Shanghai’ with raspberry, cranberry, Absolute Elyx, cherry bitters and lemongrass syrup topped with sparkling wine. Sure to be the perfect addition to an evening spent relaxing over tapas with friends!
Matt has extensive experience working for some of the hottest bars and restaurants both locally and internationally. Born and raised in country NSW, Matt moved to Manly where he managed Minsky’s in Cremorne. He then spent over 5 years in USA working in the Los Angeles and New York hospitality scenes, before moving back to Australia to work for Merivale Group. During his time there he managed The Beresford and then Operations at The Ivy. It was while working at The Beresford that Matt met business partner Tol Broinowski.
Tol is a Melbournian who grew up travelling all around the world. Having settled in Sydney many years ago, Tol has been working in bars for over 10 years – always with the ultimate goal to one day own his own. Tol has worked for some of the city’s largest hospitality groups including Solotel, Hugo’s Group, Keystone, Merivale and Drink and Dine, and brings a wealth of experience to the partnership.
Donny’s Bar brings to life the pair’s love for rustic, warm and comfortable places to let go, relax and enjoy the company of friends and family with great food and drinks. Designed by Sydney based architecture firm, Luchetti Krelle who are known for their work on many renowned venues including Momofuku Sieobo, Ananas, Sake, Hinky Dinks and Adriano Zumbo at The Star, Donny’s Bar is a two-storey, New York style loft bar and dining area. The interior of the venue has been inspired by Matt’s childhood in the country as well as some of New York’s best small bars. Donny’s Bar has a warm and simple feel, featuring exposed ceilings, brick walls, railway sleeper bar fronts, copper bar tops, exposed copper piping and vintage lighting. These features combine to give the space an inviting and relaxed ambience, finished with the finest attention to detail.
Donny’s is a small, local bar with a versatile offering and cosmopolitan feel, destined to become one of Manly’s most talked about and loved institutions.
